The new and impressive Cotswolds Distillery officially opened in July with product development of a Cotswolds Dry Gin underway. Head Distiller Alex Davies, formerly of Chase Distillery, has started the distillation of a single botanical library before full-time production in September. This will show exactly how each botanical behaves under distillation and ultimately how it will taste. With the help of a local botanist, the team is in search of rarely used flora, such as red hemp nettle, pennycress and quince seeds. In addition to Cotswold dry gin, there will be ultra-premium Cotswolds single malt whisky, an innovative English rye whiskey, and a range of high quality artisanal liquers.
