The new Cotswolds Distillery has bottled its first batch of flagship London Dry Gin - with a Cotswolds twist of local lavender and bay leaf which is grown sustainably on a farm fewer than 20 miles away. Juniper, coriander and angelica root are macerated and left for 12 hours to allow their flavour characteristics to infuse fully. The team then adds the local lavender and bay leaf, along with grapefruit, lime, black pepper and cardamom seed. After distillation it is finished with naturally refined Cotswolds water. The gin retails at £34.95 for 70cl with an ABV of 41%.
